Coriander, Almond & Lemon Pesto

Making pesto is a perfect way of preserving your home grown produce into a versatile, healthy and tasty condiment which tastes great on just about anything. Loaded with antioxidants
Ingredients
1 tightly packed cup packed Fresh coriander, washed and dried
¼ cup Toasted nuts – Any toasted or fresh nuts will do, We use almonds for the health benefits. If using whole nuts chop roughly before adding into the blender
Fresh garlic – 1 clove
¼ cup grated parmesan (for a vegan alternative use 2 tablespoons nutritional yeast)
¼ teaspoon Salt
2/3 cup extra virgin olive oil
1 teaspoon Fresh lemon juice
Method
- Layer ingredients in a jug blender starting with the garlic, olive oil, salt, coriander leaves, nuts & parmesan
- Blend till all ingredients are well mixed. You may need to stop blending and carefully stir a couple of times till it ‘gets going’
- Add lemon juice and stir in
- Transfer to a bottle container with a lid and keep in the fridge. Keeps for a couple of weeks provided there is a thin layer of olive oil to stop oxidation on the top layer
